Spelt Ravioli with feta, spinach & sundries tomatoes

First you make you filling. Start with your spinach. Fry it for about 30 seconds with some oil in a pan. Let it drop out and then mix with the feta and sundries tomatoes .

The pasta dough.  I’ve used ;

  • 500gr Spelt flour &
  • 5 bio eggs

Mix it first with your dough hook and then hands for about 4 minutes. Let it rest in plastic foil paper in the fridge for about an hour .

If you have a pasta machine you’ll go from 8 to 6 to 4 till 2.. If you have to roll, it takes a little bit more effort but will also work quite good!

Make sure you have enough flour on your table so it doesn’t stick. Place your little balls of filling on the pasta, put some eggs around it so the ravioli will stay together and place an other sheet of pasta over it . You wanna press it a little on the sides and then cut out the ravioli pieces. Squeeze then just a little bit to make sure there is no air inside.

Now you can do 3 thing :

  1. Eat them straight away !! Yamm! Just cook them for about 3-4 minutes.
  2. Put them on baking paper in the freezer, and once they are fully frozen you can put them together, now they will not stick anymore.
  3. Put them one next to one on, and in between clean towels so they don’t stick together, keep them in the fridge and serve them up later ! 🙂
